Ingredients

  • 6 fresh Eggs
  • 120 gr Sugar (1/2 cup)
  • 450 gr. Mascarpone cheese (16 oz)
  • 400 gr. Ladyfingers (126 oz)
  • 480ml (2 cups) of strong brewed Coffee, cooled
  • unsweetened Cocoa Powder, for dusting

Instructions

  1. Start by separating the yolks from the whites and keep aside only 3 egg whites.
  2. Whip the egg yolks and sugar until the mixture is pale and fluffy.
  3. Whip the 3 egg whites until stiff, then add them slowly with circular movements into the egg yolk cream. (Adding the whipped egg whites will help the final cream to be softer and more airy)
  4. This is the base of your creamy filling.
  5. Add the mascarpone cheese to the egg mixture, folding it gently until smooth.
  6. Pour the cooled coffee into a shallow dish. Quickly dip each ladyfinger into the coffee, but don't soak them too much—they should be moist but not soggy.
  7. Layer the dipped ladyfingers at the bottom of your serving dish.
  8. Spread half of the mascarpone mixture over the ladyfingers.
  9. Add another layer of coffee-soaked ladyfingers and top with the remaining mascarpone mixture.
  10. Continue creating as many alternating levels of ladyfingers and cream as you like until the desired height of the cake, but finish with a generous layer of mascarpone cream
  11. Dust the top generously with cocoa powder.
  12. Pop the tiramisu into the fridge for at least 4 hours, but overnight is even better. This gives the flavors time to mingle and develop into that iconic tiramisu taste.
