Today I woke up with the desire to drown my routine anxieties and stress in something sweet and gratifying.
I had these Chocolate Chip Butter Cookies old recipe, so I’ve tried to revitalize it by using some lighter ingredients that I love.
This is how this Cookies with Dark Chocolate, Sultanas & Rolled Oat recipe was born.
Also, at least for me, mixing and shaping ingredients is a great stress reliever. Is it the same for you too?
These cookies are quick and easy to make, and rolled oats make them crunchy and healthy. Moreover, you can make this dough in minutes.
I replaced the butter with the use of seed oil and reduced the amount of flour by replacing it with a dose of rolled oats.
Once baked, I relax and look forward to these tasty delicacies.
Servings = 15 cookies – Prep. Time = 10 minutes – Baking Time = 20 minutes
INGREDIENTS
- 130 g Organic All-Purpose Flour
- 80 g Organic Old Fashioned Rolled Oat
- 1 egg
- 50 gr Organic Dark Brown Sugar
- 40 ml corn oil
- 15 g baking powder
- 1 pinch cinnamon
- 1/2 grated lemon zest
- 50 gr Organics Raw Dark Cacao Chips
- 40 g Organic Sultana Raisins
DIRECTIONS
Beat the egg with the sugar until it becomes fluffy and creamy. Then add in the oil, the lemon zest, and a pinch of cinnamon (this is optional).
Mix the flour with the rolled oats and the baking powder, then pour the egg cream over it.
Add the chocolate chips and sultanas and mix everything with your fingers until obtaining a smooth and shiny dough.
Keep the dough to rest in the fridge for 20 minutes.
After this time, bring the dough to a clean work surface.
Roll it out with a rolling pin to obtain a 1.5 cm high sheet.
With the help of a Round Cookie Cutter or even a glass, make about 20 cookies.
Place the cookies on a baking sheet lined with parchment paper.
Bake in a fan-assisted oven heated to 170 C° for 20 minutes or, if in a static oven, at 180 C° for 25.
Your Dark Chocolate, Sultanas & Oat Cookies will be done when they take on a golden and crispy appearance.
