Herbs Parmesan Balls

Servings = 4 pax    –   Prep. Time =20 minutes   –   Cooking  Time =13 minutes 


  • 200 gr. Mixed Herbs (spinach, chicory, chard….as you like)
  • 100gr. Grated parmesan cheese
  • 100 gr. Butter
  • 2 eggs
  • 3 slices of bread
  • Chive
  • Salt


Soak the bread in salt water, squeeze it and put it in a bowl.

Chop the herbs and add in the bowl the grated Parmesan cheese, the eggs, a pinch of salt and some chive.

Deeply mix the ingredients to obtain a compact dough. With a little wet hands, take small pieces of dough and form balls with your hands. Then boil the balls in plenty of salt water. Cook the balls in water for 8 minutes then drain and take aside.

Melt butter in a frying pan, when it is hot to brown the meatballs for 2 minutes.

Heat the remaining butter and make a light cream with grated Parmesan cheese, then pour the hot sauce on herbal balls and serve.
